Tamales!

I made tamales today. I’ve always wanted to make them so today I finally got all the stuff and did it. I got corn husks and already made masa at the Mexican supermarket near us. I made a mistake with the masa and bought tortilla masa. I didn’t even look as I didn’t know they made tortilla masa. I had to go back to get the tamale masa. I bought carnitas for the filling.

It was pretty easy to make them but it’s a little time consuming. It took about 20 minutes or so to make 15. After you make them you have to steam them for close to 2 hours. I must say they were pretty darn good. Next time I would use more filling. This picture isn’t very good but it’s the only one I took. You get the idea.

My first apple pie

Pasta e Fagioli is what Donna wrote about a week or so ago. She said it was really good and would be even better with sausage. I decided she was probably right and made it tonight. It was really, really good.

Alton’s pancakes

I decided to try Alton Brown’s pancake recipe the last time I made them and they were so good that’s what I’m using from now on. Here’s some pics to get you hungry.

That’s the batter. I find I have to use a little more buttermilk than is called for because I use Knudsen’s which is very thick.

Fryin’ Turkeys

We got a turkey fryer about a month ago for half price. Today we finally used it. It took about 40 minutes to fry a 13 lb turkey and is it good! It was dark brown on the outside but moist and tender on the inside. I think I’ve found the best way to do turkey. I wonder how a tri-tip would be?

Gumbo Day

Tomorrow is Gumbo Day at work. That means I’ll be making my roux. For those of you who have never made a roux it’s not easy. Simple yes, but not easy. It involves mixing flour and some kind of fat(oil, shortening, lard, etc.) in a pot and cooking it slowly, stirring ALL THE TIME!

If it only took 10 minutes or so it would be easy but it takes at least an hour for the dark chocolate color needed for a good gumbo. If you have the heat too high it will burn and you’ll have to start all over. I found a website with some pretty good recipes a few years ago.

I’ve made my gumbo about 6 times. So far I’ve never burned the roux but I know statistics will catch up to me sooner or later.

I like the spice so I usually add some kind of habanero sauce. One time I added a little of “Da’ Bomb“. For some reason there was a lot left over that Gumbo Day.
