Alton’s Cottage Cheese

Alton Brown made some cottage chesse from skim milk and like most stuff he does it looked really good so I tried it. You take a gallon of skim milk and heat it in a pot. When it gets to 120 degrees you pour in 3/4 cup of white vinegar and stir. The milk will curdle pretty quick but you leave it sit for an hour to get the most out of it. When it’s cool you pour it into a strainer lined with cheesecloth and rinse it under cold running water for several minutes. After that you break it up in a bowl, add half and half, a little salt, and eat.

It is good but it’s not worth the time and effort. It doesn’t actually taste like cottage cheese. What it does taste like is cheese that hasn’t been aged or a little like cheese curd.

  1. I love cheese curd! I guess you are too young to remember when Grandma Lafferty made “Dutch cheese”. When Canisius would send their milk back with too high a bacterial count, she would pour some into one of her big pans that she kept for that purpose, and leave on the back of the kitchen stove for two or three days–absolutely delicious.
    Your big brothers would remember it.

  2. Nope, I don’t remember that. I do remember how I love cheese curd. That was one of the perks of going to Wisconsin for Joce’s wedding. I got a whole bag of curd all to myself since Betty wasn’t that fond of it. Luckily our hotel room had a fridge.

  5. Want more? We’ve got cheese curds in every grocery store. Even with cool flavors. Eric gets the dill flavored ones. Did I take you to Mars Cheese Castle while you were here? WI does fun things with cheese, and meat… I’m not very fond of the meat stuff though.

  6. I do like Alton Brown. Good Eats is more of a cooking class than a cooking show. However, after watching him for so long, I now spend more time counting the number of times he says “uh” in each episode than how many eggs he uses.

  8. I wish I had eaten a gallon of cottage cheese. When I made it I probably had 2 cups of actual cheese.

  9. I printed out the recipe. Maybe someday, I’ll get ambitious enough to make some. I was a little skeptical when I read the first few comments; they couldn’t eat it. Wonder what they did wrong. It sure sounds good.

  16. I had a change of heart after talking to someone who got one. He is probably the most tech savvy guy I know and he said “It’s 5 times better than any technical device I’ve ever seen”. That was what it took for me.

    I also found out it’s only $10 more a month than what I had been paying. If it had actually been $50 or $60 more a month I wouldn’t have done it.

    I have also been wanting to get either an iPod or something similar for the last few weeks.
